Kyoto, the eternal ancient capital of Japan for
over 1,000 years, has nurtured a wide range of culture
in the rich natural surroundings. It is a great pleasure
for the staff at Nishiyama to have our visitors to
feel the beauty of the old capital. You may choose
a sleek modern western style hotel when in Tokyo or
Osaka. However, when in Kyoto, it would be foolish
not to choose a Ryokan as you know what they can offer
you - the heart of Japan. We provide our best hospitality
every season: the fresh scent of Tatami mats, seasonal
flowers and plants, the best ingredients of the day
and much more.
At the same time, having the authenticity and hospitality
of a Japanese style Ryokan, we still keep the convenience
and comfort of a hotel-like facility. Keep your privacy
and feel the heart of our warm hospitality. |

| Message from our chef |
| The most important factor of Japanese cuisine is how the cook
makes the most of the real taste that
ingredients naturally possess. I have
been working as a Japanese chef for 19
years but I still learn something new
every day and improve my skills as a cook.
Another important factor is to create
something that is adapted to the time
trend. Of course it is essential to acquire
all the basics of cooking, but on the
other hand, it is also important to try
something new. Everything I watch, see
and hear can teach me something that I
can use for my cooking. |
